i was lazy again (don't know what's up w/that) so i baked potatoes, steamed broccoli and cauliflower, topped them w/white sauce and walnuts. dinner.
*no animals were harmed here last night.

This is one of my favorite lazy meals. I like roasted corn and sliced tomatos on my potatoes also.

ReplyDeleteThis was a meal I made about once a month years ago for 2 reasons. My job did not allow time for complicated meals during the week and my daughter was a very picky eater. The only difference is mine wasn't vegan, I made a cheese sauce.

Yesterday WE enjoyed butternut squash, onion, and apple cooked in the crock pot along with some dried cranberries and walnuts (WALNUTS were what triggered my comment - when I saw them on YOUR potato combo).

ReplyDeletejoan - basic white sauce, 2 T earth balance margarine with 2 T flour stir until nutlike flavor emerges and add 1 c soymilk. season.
karin - if you have the time and are not lazy roast the veggies and walnuts and proceed. yum.

Looks good to me. I wouldn't call that lazy either. Just simple comfort food. I just discovered roasted cauliflower-- I could eat an entire head cooked this way. Who Knew?......
ReplyDeleteI was in my garden today and noticed little foxgloves popping up. Are you having any luck? Would you recognize the leaf? Kind of looks like a mint leaf at first.
