mushroom gravy*

I'm not sure how appetizing this picture of mashed potatoes and gravy is, brown and white food does not photograph well.  Anyway this is the mushroom gravy that I'll be serving on Thanksgiving.  It's thick and savory and delicious.   Several people asked for the recipe so here it is.  I hope you enjoy it.  And thank you to everyone for your well wishes, I'm feeling good again.  The secret to Magical Soup is the large amount of red pepper flakes that help numb the throat and unstuff a stuffy head and of course drinking the whole batch yourself really forces fluids, so give it a try next time you or someone you love is under the weather.

Mushroom Gravy

1/4 c earth balance margarine
1/3 c flour
3 c vegetable broth
1 package of mushrooms
1/4 c soymilk

On a sheet pan roast the mushrooms with a light drizzle of olive oil at 400 degrees for about 15-20 minutes.  Set aside.

In a saute pan
melt the earth balance
stir in flour, making roux
slowly stream in vegetable broth whisking away any lumps
bring to simmer and add mushrooms
stir in soymilk

  1. The gravy sounds wonderful but I'm impressed with the texture of your potatoes! Everyone here likes them dripping and soupy ... it's not pretty.
Glad you're feeling better - talk to you soon.
Do you have a special food photographing spot - I love how you capture the food going right into landscape in the background.

  2. Sounds great. And the thing I like about your recipes is they're all really easy. I could eat this everyday!

  3. awww, you two, get to me everytime! this is the easiest gravy recipe i've ever used.

  4. Thanks for that. I was wondering what to do about gravy this year, but I think I'll give this a try. I love your potatoes, too. That's how I like mine - thick and really potato-y, not whipped. Karin

  5. Yummm.... that looks delicious. Makes me want to run down to the kitchen and whip some up!!

  6. Spot on, Janet! SO difficult to make brown and white food look good--the background plus the shiny plate gives a nice balance, so the mind thinks "pleasure" instead of "brown and white."

That's the way I make gravy, too, and mushroom is my favorite above all others :)

  7. Happy Thanksgiving Janet, your menu looks divine, hope all goes well! xx

  8. karin - thank you for always making such wonderful comments and do try the gravy.

karen - thank you and they are so easy, you can just whip it up.

meg - thank you, the background and plate surely do help.

blighty - thank you and i hope all goes well too.

  9. Happy Thanksgiving Janet! I hope it all goes well. Following your lead I am keeping everything simple this year. Thanks again.

  10. Happy Thanskgiving Janet,
great that the magical soup has done the trick! know how much I love potatoes
and now even more so with mushroom gravy....
    salivating here before breakfast!

    Enjoy the day :)

  11. Mmmmmmm.....

    Holy geez, I'm hungry now.

  12. Hi Janet,

The funny thing is that I can almost taste your mashed potatoes with mushroom gravy! It does look good!!!

Wish you and your family a Happy Thanksgiving!

    Lieve groet, Madelief

  13. This sounds so good. I'm glad you are feeling better. I'll try your soup the next time I'm under the weather.

    Happy Thanksgiving.

  14. Looks delicious to me! Mashed potatoes and gravy is one of my favorite comfort foods.

  15. Glad to hear that you're feeling better.
Hope you have a happy and relaxing day tomorrow.

  16. Janet,
I just posted about a Thanksgiving I hosted for my family at a time when it was only about health for me. I didn't get the accolades I had dreamed.

I think there are those amongst us who can make delicious foods without dairy, meat or saturated fats and there are those of us who suck miserably at it.

Thank you for sharing your deliciousness in such a lean and healthy way.

  17. Looks and sounds delish!! So glad to hear you are feeling better Janet! I hope you and your family have a wonderful (stress free;) Thanksgiving!
    big hug,

  18. Have a wonderful Thanksgiving - don't work yourself into the ground!! xx

  19. Oh yum, made with roasted mushrooms. How divine.

When are you going to open a vegan restaurant Janet?

  20. WONDERFUL.. THE HAPPIEST OF THANKSGIVINGS TO YOU.. (and no stress this time J!!) xxx

  21. Oh my goodness, so glad I went back to take a peek at this post! Looks delish and I would never think to roast the mushrooms.
