    Tonight will be my favorite lazy meal...Gardenburgers (especially their Chipotle ones they just came out with are yummy) and homemade baked fries. On occasion I will saute some mushrooms to put on top of the burger.

  5. Cheese, crackers and an apple. In fact that is my lunch most days, and my supper when Mister is not around.
    Or....just a little chunk of cheese. Can you say lazy?

  6. Fav lazy meal? The Tacos Leo brings home from our favorite taco house. Cant get much lazier than that. And Janet? They make yummy potato tacos too. We'll have to go when you come out. ;)

  8. Too funny! David says when I try to buy things for the house and always want the nicest that "everything doesn't have to be heirloom".

    So true about the food. David and I both enjoy cooking but he is the real chef. Some nights I honestly just want a grilled cheese.

    My lazy food is probably pasta. David doesn't eat it and when I am alone (when he travels) I always make quick pasta suppers - sauteed garlic, olive oil and grated parmesan. Done.

    P.S. Loved your comment on my post about "Embrace Mediocrity". Such sage advice. We all try too damned hard don't we? I have had a horrednous week and when David's mother offered to make David a birthday cake (instead of me) for the party tomorrow which she is hosting this year, I said YES! Usually I am a control freak and like to make his cake when she hosts so he knows I love him, but honestly, she is retired and I am frigging pooped, so I let go and said YES. Feels great.

  9. oh dear, could admit along roll-call of shame, but will divulge: scottish oatcakes and cheese with apple or celery, fishfinger sandwich with brown sauce, bagette and brie and grapes, pitta bread and store-bought hummus, the odd guilty chinese takeaway...mea culpa!

  10. Hmm, salads are up there, but pasta is always good, lately I'm liking the pre-made quiches from Whole Foods, just warm and go. Also a big fan of their soups with some whole grain bread, Mmm, souppp. *Amy

My Negative Calorie Soup (http://bodecibody.blogspot.com/p/bodeci-recipes-archive.html I make in advance and freeze into meal size containers) with hummus, feta or Parmesan and whatever is in the fridge that works, heated in the microwave. Add crusty sour dough or 'Ak Mak' crackers. I know, sounds strange, but it's really good!

    Ours is organic linguini with sauteed organic arugula, artichoke hearts, olive oil, garlic and capers. Oh, and now we throw in some cherry tomatoes from the garden. It tastes like summer!

  16. For a lazy meal I call my daughter who works at a health food shop and ask her to bring home organic savoury pies which I heat in the oven.
    Served with mashed potatoes and lashings of sauce.

  17. I would have to say that my favourite lazy meal is pasta. Made with cherry tomatoes and basil from my garden.

    Or I tend to make large meals, like a big vegetarian lasagne, for my husband and I, and freeze part of it reserved just for my lazy nights! I try to freeze at least one meal a week!

  19. You have a true gift Janet. Not many people can make a scraped plate look like a work of art. Love your glasses too.

    As for a lazy meal, is delivery pizza not too gross? Or for made at home, I slice a big potato (skin on) and make oven chips with a bit of olive oil. Plenty of salt.

  21. wow everyone has such good ideas. i'm getting hungry just reading them. it sounds like pasta, take-out and salads are popular. trina wins the prize for freshness, although in all honesty that is a bit of the work with the sauteing and such. i love the sound of mashed potatoes and lashings of sauce. yum. belinda, i have no idea what scottish oatcakes are but i bet they are good. also, it's interesting to me that terri calls dinner supper. we did too growing up. we always had supper at 5. i like the sound of that. i think i'm going back to that today. i do agree with everyone that the best lazy meal involves someone else preparing it.

  25. My lazy dinner night is when my 15 year old step daughter cooks and my husband cleans up. She made black bean soup with a Mexican style salad last night. It was yummy! I asked her if she would like me to home school her so she could cook every night. Of course, she declined :(

  26. Janet, oatcakes are really plain and simple scottish crackers made from rough or fine milled oats,water, and salt. I love them with cheese, but Scots will have them also for breakfast usually with honey or marmalade, which my hubby likes. They are so plain it makes me wonder if you need to be brought up on them to love them, but I think they are great with strong tasting toppings!

    They are also super-healthy and vegan. I would be happy to send you some to try yourself. Just let me know. Belinda x

  32. Like many others, my easy meal is pasta. I'm not against using a jarred sauce sometimes, but if I don't have any I just saute some tomatoes and jarred artichoke hearts in olive oil with some red pepper flakes and a dash of white wine, and pour over angle hair or whatever's in the pantry...

  34. Our go-to lazy meal is "pizza" that we make using indian flat bread, a jar of pasta sauce, fresh-grated parmesan cheese, tomato slices and basil leaves. Cheap, easy and delicious!
