cauliflower steaks with cauliflower puree*







 i almost didn't post this recipe because white food on a white plate just doesn't photograph well.  but halfway through eating it, i changed my mind because it is so dang good.  while the photo is not that great, the recipe sure makes up for it.

i got the original recipe from epicurious and after reading all the reviews, a lot of people were suggesting using almond milk as a substitute for the whole milk that the recipe called for.
i happened to have a small head of cauliflower in the refrigerator and i always have almond milk so i made it. 
only 3 ingredients - i love recipes like this.


i made a couple of other changes too.  if you want the original recipe you can find it here.

while the cauliflower was in the oven, i threw in a gardein chick'n scallopini patty to serve on the side.
it went so well with this dish and added an extra 14 grams of protein.

i would serve this dish for company, it's that good.





1 head of cauliflower
1/2 cup almond milk
1/4 cup vegetable broth

slice the cauliflower down the middle and make 4 steaks.
reserve the rest of the cauliflower florets for the puree.
the size of cauliflower will determine how many steaks you get and how many florets are left for the puree.  use your best judgement.  i would say that a normal sized head will get 4 steaks so if you have a lot of florets left then increase the almond milk and vegetable broth respectively.
you really cannot go wrong estimating here.

set the cauliflower steaks on a baking sheet and bake at 350 degrees for 10 minutes.
don't skip this step b/c this is drying the cauliflower out.
meanwhile cook the florets, almond milk and vegetable broth until soft and then puree in a blender.  if by chance the puree is too thin, return it to the sauce pan to simmer until it reduces a bit.
 set aside and keep warm.

after the cauliflower has dried out in the oven transfer it to a skillet with a small amount of vegetable oil and cook until tender and brown.

serve the steaks over the pureed cauliflower add salt and pepper to taste and enjoy.


*no animals were harmed making this dish.

and btw, this just saddened me this morning.
can't donald trumps sons think of anything better to do with their time and money?
seriously.

today i'm grateful that i can choose to live simply, even when the world is complicated.

    2. you betcha! love the ideas she researches from all over. I have been making my own laundry detergent for over a year now. once my windex is gone, going to try the 27 cents per bottle formula. I made the Dove body wash, but next time I will be getting a different soap to try. good luck!

  4. I could live on cauliflower alone! Seems easy enough to make on one foot so I'll let you know tonight how mine turns out. :) I usually roast mine with chopped red peppers and onions but this sounds yummy.

    What has me baffled is his response to PETA....really Mr. Trump?!

    Did you read Mark Bittman's article in the NYT on Sunday? About chicken and about not eating chicken but substituting a vegan, factory-made bit of protein that "tastes like chicken".
    I love that Mark Bittman has come to the conclusion that this is the sensible choice: to alleviate animal suffering, for the environment and for our own health and conscience.
    Oh and the Trump sons: for shame. I nearly cried when I realized that was an elephant's severed tail he was holding.

  6. Brilliant idea....it's wonderful that cauliflower is so versatile. I use it to make fauxtatoes and rice on a regular basis.I usually have three or four heads in my fridge on any given day. I will have to try this very soon.

    We are rather fond of Cauliflower although it usually takes the form of a creamed soup. However, our housekeeper who is always on the look out for a new receipt and is extremely skilled in turning a glossy picture into an edible dish will be pointed in this direction, that is for certain. It looks deliciously simple....perfect!

    As for the silly Trumps.....mindless, cruel and horrid....and not handsome, either!!

And to think of all the good causes they could support and get the attention they all seem to need with their millions. I too cried and try not to get too angry thinking about the sport hunting all these jerks do for a "thrill."

      The Trump story is depressing.

      As you might have noticed, the celebration of animal misery by way of fur promotions on design blogs seems to have increased recently.

      The most optimistic way to look at these fur promotions is that these design bloggers are oblivious. They just don't know what they're doing and therefore view the fur items as nothing more than a design element.

      If they knew what's what, they might be more thoughtful in their actions.

    I love our simple regular McDougall starch based diet because involves no animal suffering, it's satisfying, economical, produces great results, doesn't restrict social life THAT much, offers many choices and is practical for long-term success. It is nutritious & satisfying and you do not become hungry. No B.S. and no gimmicks. No counting calories and no measuring and weighing stuff. It's really an EASY way to eat.

    Our simple diet consists of steel cut oats type of oatmeal with blueberries & chopped walnuts & almond milk, potatoes, sweet potatoes, brown rice, various grains homemade lentil soup, other soups including miso soup, pasta, hummos, beans, salads, steamed vegetables and raw vegetables daily. Sometimes for dessert we have organic soy yogurt or a chocolate-banana smoothie made with frozen banana, almond milk and cocoa powder. In the summertime I like to make green smoothies made in the Vita-Mix, they're refreshing on a hot day and it's a good way for us to get green vegetables.

    There is no need to eat meat. Meat has concentrated toxins and is too high up on the food chain. We all need to eat lower on the food chain. For our OWN health and the health of the planet-!!

  14. I am going to try this . . . I wonder how the cauliflower steaks would stand up being grilled? I am amazed at the yummy taste of cooked cauliflower, we bake it with other veggies often.

    I read the Trump piece and could nt look at the picture. I find things like this unimaginable !

  15. A cauliflower steak sounds great. I'd probably add some other flavors to the cauliflower sauce though like onion or carrot or curry or something. I haven't seen those burgers yet.

  24. Janet this looks delicious. I love cauliflower and can't wait ti try it this way. The Trump story is horrible. I am so disgusted anyone would pose with the tail of an elephant they killed. How do these people sleep at night? I am going to share this story and I hope others will too. It's as bad as the fish and game head in California, taking his photo with the mountain lion he killed. The more we get together against these things, the more change can happen in this world.

    By the way, a certain popular blog did feature fur last week or so. I was saddened about her total lack of thought publishing this. I tried to put a comment on her blog and you couldn't even do it. She disabled the comment section. Shows how much she cared.. Sad

  28. janet, i read your blog often but have never commented. i've also never tried one of your recipes.
    tonight i'm doing both!

    i didn't think i was a fan of cauliflower but my hubs loves it. your picture inspired me to try it- we BOTH loved it! i did follow the original recipe with some substitutions based on what i had in on hand and will absolutely make it again.

    also, we grilled the steaks and had no problem at all. bonus- one less pan to wash!
