white gazpacho - again

just popping in with a quick post today.
and while i'm at it i may as well apologize for my lack of posts.
sorry, but i haven't had anything to say.

the weather has been dreadfully hot here and i can't bear to turn the stove on.
so yesterday i went digging in the recipe archive and as soon as i saw this i knew it was what we were having for dinner...

this recipe that i swiped from slim who i believe swiped it from food and wine magazine.  it is so good and so refreshing you may want to give it a try.

i changed the recipe a little and so this what i used last night

about a lb and a half of green grapes
1 peeled and diced cucumber
2 chopped scallions
1/4 c almonds
1/2 to 1 c almond milk
6 oz plain soy yogurt
1/4 c rice vinegar
1 t red pepper flakes

i pulse the almonds in the blender first and then add the rest of the ingredients and blend til smooth.  refrigerator for a couple of hours and serve with a small salad and slice of bread.

  1. Hello Janet:
Well, Gazpacho is a staple food here during the summer. Indeed, it is on the menu for a lunch party tomorrow, but the red [tomato]variety and not this exotic white version. We are intrigued by this most unusual of cold soups and whilst temperatures continue here at 30C+ we might well give this a whizz!!!

  2. This looks so good. I got a Blendtec a few weeks ago and have been trying every recipe I can get my hands that involve using a blender.

  3. Hey Janet. Lack of something to say never keeps me from posting, to the dismay of some I imagine.

    Love to you.

    xo J.

  4. Hmmmm. Is it a fruit soup or a vegetable soup? Curiously ambiguous. But it sounds pretty good and very refreshing. I like the addition of the red pepper flakes.

It's getting cool here. I was thinking of making my vegan Tom Ka to test my recipe and to warm things up a bit. I've seen you've had earthquakes and monsoons. I've been worried.

  5. Your soup sounds delicious Janet! Enjoy your week.

    Madelief x

  6. Mmmm, that looks and sounds delicious! I hope we get another blast of sunshine before Autumn sets in properly so I can try this out! xxx

  7. Oooh how delicious and agree hope we get some warm weather here in UK before Autumn. Last week wasn't bad but I would like a little more sunshine! Come over and visit me Janet if you'd like to at my new blog - Neutral Territory. Hope all is well. XXX

  8. p.s. LOVE the new font of Gardener's Cottage x

  9. Perfect timing - I've had about all of the tomato and cucumber salad I can handle, but still the cucumbers keep coming!

  10. Janet,

I've never even heard of white gazpacho...sounds and looks delicious! Love the new look of your blog, subtle changes, but just right!

  11. This is a great recipe its a keeper thanks for sharing and soooo simple!

  12. How funny- we also pulled out the white gazpacho recipe again just last week.
    Still a big hit!!

It's beautiful here in Santa Barbara. Not too hot but still feeling like summer.

PS. Is this a new template?? It looks very chic and clean. I wish I had the ability to write cursive-y copy on Wordpress :(

PPS. Have you started your packing for NY yet?!!

  13. am dying here. Can you come out and look after us? You wouldn't have to cook any meat. x

  14. Yes! Perfect timing! The muggy heat continues...no question about what's for dinner tomorrow night! Thank you, again, Janet and Slim! The recipe is cool even if we aren't! Phew...
    xoxo, Chris
