one of my favorite things to do on weekend mornings is make a tofu scramble.
the weekends are just so relaxing and there isn't the normal weekday rush and there is time to slow down and put something really filling on the table.
when i first became a vegan i really missed the big breakfasts of eggs and bacon but no more.

weekend scramble
1 or 2 potatoes cut up and sauteed in a tiny bit of oil along with peppers and onions.
when the potatoes are tender and properly browned i crumble in 1/2 a package of baked tofu. i use trader joes.
while this is all cooking, season with salt, pepper and chili powder.
i usually garnish with slices of avocado or green onions.
so that is that.

ReplyDeleteI never thought of adding potatoes. I usually just do the peppers and onions and sometimes mushrooms. You are so smart!
ReplyDeleteYum! I do scrambles on Sunday as a nice treat. We like sauted mushrooms added to the tofu and potatoes. Whole Foods has a nice variety of vegan "sausage". Sometimes I'll cut up some and add it to the scramble. My husband always has salsa with his. Perfect for the cooler days ahead! Have a great weekend!

ReplyDeleteHave a great weekend, too, Janet! I wish I liked tofu...I have tried. Really, I have. But I can't get over the texture even of extra firm tofu. It's too bad because it's such a great alternative to chicken, eggs, meat, etc.

ReplyDeleteThis sounds delicious! But not for breakfast, this is a lunch/dinner meal to me :-) I never understood the American bacon thing in the morning. We Europeans do cheese, jam and "muesli" in the mornings :-)

ReplyDeleteWell my Mum's coming up from the country and we are seeing my grandparents and sister's fam and having a big fancy dinner tonight. Don't get cross but there'll be roast beef and baked ham. And a big pavlova. But I'm also actioning some salads just for you. Altho actually one of them does have sour cream now that I think of it. But the rest are vegan! Anyway happy w/e. ReplyDeleteI hadn't heard of adding potatoes, will have to try that. I usually add a side of cooked mushrooms and some tomatoes (fresh or pan fried) with a slice of toast... heaven :)
Janet, not much of a cook these days for I live alone and eat mostly raw, but do want to try your delicious looking scramble. I've baked Tofu, but have never tried scrambling and this dish seems simple enough to try. I wonder if frozen potatoes would work and whether you must first boil your potatoes? Thanks.
