Today I ate the last tomato from my summer garden. Oh how I have loved this sandwich. Fresh tomato, avocado, shredded carrot, sunflower seeds and vegannaise. What was your favorite summer sandwich recipe?

ReplyDeleteMy favorite summer sandwich is a plain tomato sandwich: whole wheat bread, lots of real mayo, thick slices of tomato, and a generous sprinkling of kosher salt.... simple perfection!
Hi Janet, the sandwich looks very good... I didn´t know you have tomatoes in your garden, how good!! I did have tomatoes this summer too, but didn´t plant them, they came with my compost and leave them grow all the way in the pots and some other places when I used the compost to improve the quality of the soil... lots of seeds in my compost.
ReplyDeleteWhat are you doing with your books... I was thinking about it and imagine a nice pile of books anywhere in your home and perhaps on the top a pretty vase with some flowers of your garden, why not??

ReplyDeleteI'm not really a sandwich person, but my favorite summer salad is one I copied from a restaurant in the city of Orange, Rutabegorz just off the circle full of antiques shops. It's called the Summer Salad (I know, not very original). It has mixed greens, roasted turkey, shredded carrot, dried cranberries, candied walnuts, bleu cheese, mandarin oranges and balsamic vinaigrette. So good! Mine's a pretty good version, but theirs, after a day of shopping, is the best!

Looks so delicious Janet! I grew up eating lettuce, tomato, avocado and mayo sandwiches. I still love eating them! I'll have to try your combination next, sounds so very yummy. Trina ; )
