orzo w/roasted vegetables
(recipe adapted from the barefoot contessa)
1 peeled/diced eggplant
1 zucchini
2 or 3 small bell peppers
1 small onion
1/4 cup olive oil
s&p
Combine these ingredients on sheetpan and roast at 425 for 30-40 min.
prepare orzo
combine 1/3 cup lemon juice
1/3 cup olive oil
1t salt
1/2 t pepper
pour over roasted veggies and orzo while hot
check seasonings
finish with 1/4 cup toasted pine nuts or walnuts
