A friend passed this super easy broccoli dish on to me. I guess the idea is that if you've been over-indulging then the purity of this dish is supposed to jump start a fresh eating plan. I don't know about that but I will tell you it is delicious, and I've made broccoli every which way imaginable. This truly is scrumptious.
1 bunch broccoli
2 T Olive Oil
1 T Earth Balance Margarine
Chop broccoli into 1" pieces including stems and leaves
Heat oil until quite hot
Add broccoli
Cover and cook for 2-3 minutes (do not stir)
Uncover, stir and add margarine. Cook for an additional 2-3 minutes
The broccoli will be caramelized and crunchy on one side and soft on the other.
I sprinkle chopped toasted Walnuts over it and have also laid it over a bed of orzo.
No animals were harmed making this dish.
Yum. Sounds like it would make a great side dish too (for us non-vegan types).

Steve - I'm vegan first and foremost for animal rights. Once I learned of the torture and rampant infection on dairy farms it was very easy to switch from vegetarian to vegan. Even organic dairy farms are awful re animal rights. Of course the health benefits are tremendous too. I would suggest you check out a documentary narrated by Joquin Phoenix entitled "Earthlings." I would be very surprised if it doesn't have a major impact on what you put in your mouth.
WOO HOO you go girl - love the vegan. Have a big bunch of the broc and will try this. I have several new recipes and the "do not stir or touch" is the key for the carmelizing of the veggies. Love it carry on......

Hi Janet, Thanks for nice comment on my wall. I don't think you want to be a full time housewife-I've been home full time for a year now and I'm ready to find something to get me out of the house. Playing around my house on a cold snowy day is a reward though! :)

J, broc is my favourite vege I love it. Meanwhile please post a long detailed explanation about how you came to be cooking treats as a chef for Hef at the Mansion. My garden is a mess. Must prune it asap.
