just mix together
2 lbs of fresh cut up peaches (or any fruit)
2 T sugar
place in 8" pie tin
in a separate bowl combine with your hands or pastry cutter
1/2 c oats
1/4 c flour
1/4 c brown sugar
1 t cinnamon
1/8 c earth balance
spread over top of peaches
bake at 350 degrees for about 40 minutes or until brown
have a sunny day and sparkly night

Happy 4th to you too! This recipe sounds great; I might try with blueberries since I have a bunch from Costco. I hated hot dogs even before I became vegan... I can't stand the fake meat ones either. It's sooo hot here in the Midwest, we'll be eating light and cool.

thanks tammy. my fave hot dog is the tofurkey italian sausages. they are great in pasta dishes but really good grilled. they are like a spicy hot dog. i hope you will try them.

DeleteOH MY. This is timely as I've been dreaming of my peach/blueberry crisp. I'm making it and I'll indulge by eating it for breakfast every morning until it's gone. Can't wait:) BTW, holding strong with my vegetarian lifestyle and I am loving it!

DeleteHmmm, looks delicious and sounds easy. Perfect! I've been using Earth Balance for about a month now and it is EXCELLENT. Regarding hot dogs...never liked 'em. I've been off meat and dairy for a month now and finding a plant-based diet to be very easy and delicious. I have tried Smart Dogs for a quick and easy lunch and I like 'em. My husband is going to BBQ hamburgers today and a gardein burger for me and I made potato salad for the meat-eaters plus mexican bean salad, fruit salad, and veggie pasta salad, all vegan-legal. I wonder why I thought eating this way would be hard?

I haven't bought hot dogs in years, but when I did it was only the more expensive ones. (not that any good ones really exist) My husband broke down yesterday at work because his boss brought hot dogs for an office luncheon since it was the 4th. He got a semi-migraine immediately after and this a.m. he said his stomach was bothering him. Guess he won't do that again!

P.S. I hope veggie hot dogs are better than they used to be! I have some awful memories of eating some at a church picnic in the 60's. (my dad and step-mom were vegetarians) To this day I cannot bear the thought of trying one!

Thanks for explaining what earth balance is. Since I refuse to turn on the oven, I'm going to try making this on the grill in a throw-away aluminum pan which never gets tossed since I line it with foil. I've used it over and over. Saves my "nice" pans from blackening on the grill. BTW, went to college in Madison, Wis. and there was an Oscar Mayer processing plant there. The smell was so gross the company put "deodorizers" up around the plant's perimeter to kill the stench. Hot dogs are just scary.
ReplyDeleteI can't stand hot dogs or those smaller ones, disgusting crap. The supermarket here keeps trying to give them to my kids at the deli everytime we go near it. I get really cross and tell them not to push that crap on my kids like drug dealers, they usually run away from me now!!! They are a bit like crab sticks, all processed beyond recognition. I am not vegan, or vegetarian but even we cattle farmers can't cop that rubbish.

I don't know how the conversation started last week at work but we were listing off what our "last meals" would be and peach cobbler was on my list for dessert. It's my favorite thing in the world.
