hello everyone!
i rarely post on saturdays so what a surprise.
i'm up early for a day of hiking in palm springs where it is going to be sunny and 74 degrees today.  i wanted to share this great pancake recipe with you before i go.

oh and btw, quite a few of you have asked about my wardrobe now that i've lost weight.
i'm cleaning out my closet and selling some things on ebay.

i'll be adding things all week.
don't hesitate to email me if you have questions about anything.

wishing you a most beautiful weekend.

  1. Janet would you believe I had pancakes for dinner the other night. Melted apricot preserves on top! Yum.

When my children were young we would do this when their Dad was away. Breakfast for dinner and they loved it!

  9. These pancakes look delicious! I've just started following your blog. I love your style and while we're not a vegan or vegetarian household we've been talking lately about including some vegan and vegetarian meals into our weekly menu so thank you for all the inpiration and recipes!!

  10. suzanne - that is not "the" herringbone jacket. the tailor was able to make alterations to my wardrobe favorite so it still fits!

  11. 1) they look so delicious!
    2) do you live in Palm Springs, I presume? No wonder it always seems to look sunny!

  12. I LOVE pancakes...I love the syrup more though.

Sure wish I could fit in that vintage dress!

Have fun skiing! I think I will go on that little escape we talked about...not quite as glamorous as skiing though. :)

  13. yum the pancakes look delicious, what do you use instead of butter or cream that isn't margarine? I too have been selling on ebay and made some goooood money too. I'm looking around for what's next! It's a bit addictive.

  14. These look yummy.
I have personal question...when out hiking what do you do for sunscreen? Do you wear a hat or certain product? I live in florida and am trying really hard to avoid sun exposure, i look 'cute' in hats but seriously dislkie 'hat hair' and am finding sunscreens to be ver heavy. Thought you might have some suggestions you could share.
    Thanks....i love stopping by.

  15. jodie i use earth balance. it's a vegan substitute for butter and margarine. it is delicious.

catherine. i wear a hat and long sleeves to protect myself from the sun. everyone who didn't wear a hat yesterday got burned, even if they put sunscreen on.

  16. 1. I am glad to hear the herringbone jacket is still going to be loved by you. You and that jacket belong together. So beautiful. :-)
2.Our breakfast was awesome! Fluffy vegan pancakes with maple syrup and blueberries! Thank you for that recipe! My husband loved them!
    3. Earth Balance is delicious. In the first cookbook by Skinny B. she says if she could have Earth Balance Babies, she would. :-)
    3. I am commenting a lot this weekend! Whoa!
    Happy Sunday! -Suzanne in Illinois

  17. I was going to try the pancakes, but do not own a sifter and don't want to buy one. But I do still make apple cinnamon pancakes from a previous recipe you posted and they are delicious!

  18. I am tickled to read that Suzanne in Illinois made the no oil dressing and loves it! Great! If you don't have heart disease you can even add a little olive oil to it if you want. There are so many wonderful vegan recipes that are easy and HEALTHY for us & planet earth & for reducing animal sufferring.

  19. you're quite the skinny dynamo! pancakes, blog posts, hiking, and a little ebay business all on a saturday. You go girl!

  20. Someone was posting on Dr Mc Dougall's boards today about this site --below--which reminds me of the section of Dr McDougalls new book on the Roman gladiators. These fighters say the plant based diet makes them stronger and faster than a meat based diet.

While I'm not much into fighting, I sure liked this information from the website:

    "Consider this:

    - If blood pumping oxygen to all your muscles keeps them moving fast and strong, but cholesterol causes blocking of the arteries and limits the flow, what if you ate only foods with zero cholesterol?

    - How is it that the most powerful and high endurance mammals – a raging bull, a champion stallion, or even an elephant can develop thousands of pounds of muscle, and have amazing endurance, yet eat only grasses?"

Beans and nuts, and products made from them (tofu, casseroles, stir fries, bean and vegetable burritos, peanut butter, etc.) have a good deal of protein, but without the cholesterol, hormones or pesticide concentrations. In fact, the Centers for Disease Control and Prevention (CDC) and the National Institutes of Health (NIH) say the average American is eating significantly more protein than they need.

  21. Those look wonderful! I love the juicy blackberries on top!
I have a vegan recipe up today :) Have a great week!

  22. Janet, I am going to have breakfast at The Gardener's Cottage...then head over to Steve's Urban Cottage for dinner!

I'll be trying these pancakes soon--I always have the ingredients in my pantry.

  23. I make pancakes every Sunday morning, it is our family tradition. Yours look delicious, I have to try them!

  24. The linked recipe says to cover the pan while the pancakes cook. Is that typical? Is it necessary? I am a very novice cook.

  25. i didn't even notice that. no i did not cover them while they cooked.

kindness is never out of style.
