mashed potato tacos
When I was in Hawaii, M and I decided that we were going to make potato tacos for dinner one night. I thought we would saute the potatoes with onions and peppers but she had the brilliant idea to mash them.
So we made mashed potatoes and added some taco seasoning, fresh grated garlic, salt and pepper. We cooked the corn tortillas without oil in a skillet until they were crisp. Topped them with salsa and fresh avocado. The creaminess paired with that crisp corn shell is heaven. Simples, as my Brittish friends say.
In other news we are waiting for the temps to cool before we start prepping the house for paint. Can't wait!

Mmm. I may have to try this. I've been sampling new things lately. My latest was a vegetable stir-fry wrap. It was delicious, but very filling. They tucked a bit of rice in with the hot stir-fried veggies. It was a keeper.

DeleteI was thinking the same thing about the protein; maybe mashing up some beans at the same time. Experimentation. Onions, garlic, tomato-y sauce and the healthy fat of the avocado; crisping up the tortilla without oil. Smart and YUM. Good one, Janet.

DeleteTrue, about mixing too much in, to something that's already figured out. I like the beans on the side idea. I've been reading so much lately about benefits derived from the combos of beans & greens, or beans with brown rice. It's noticeable on some of the foodie websites where a perfect recipe is posted for which many reader comments follow, with most everyone offering how they tweaked the recipe, which I figure has gotta irk the person who invented it, maybe thru great trial & error, in the first place.

ReplyDeleteAs you so well know we are never, if we can avoid it, to be found in a kitchen. We do, however, love food and eating. So often when we arrive here our taste buds are tingled with your glorious receipts and we can but wish that we were near neighbours and that the table you show as laid could have room for two more!
We love avocado but Timea, our housekeeper, dislikes it with a passion so we never get to eat it. The same can be said for aubergines. Please can you adopt us? We are housetrained.....just!

Last May I had deep fried mashed potato tacos at a little all vegan Mexican food restaurant in Monterrey; I think it was the best intentionally vegan Mexican food I have ever had!
