Overnight Oats
Overnight oats have been a favorite breakfast for over a year now. They are so easy and nutritious you just cannot go wrong with them. Use the basic recipe as a template and then the sky is the limit when it comes to additions but these are my favorites.
So each night I take about 20 seconds and pour 1/2 cup oats into a bowl with 1/2 cup soymilk or any other milk you desire and stick them into the refrigerator, I don't even cover them.
In the morning I add my fruit and nuts. Usually apples, berries and nuts. Sometimes a little brown sugar and cinnamon, sometimes not.
Frozen fruit is good in a pinch too. Frozen blueberries, raspberries and blackberries are so good! I keep a wide variety of nuts on hand so walnuts, pecans, chia seeds, you name it goes in.
What's your favorite breakfast and if you make overnight oats, what do you add? I'm thinking I'd like to do a pumpkin spice for the Fall. xo

DeleteOatmeal is one of our favorites for the am. I usually cook it but will try this with my homemade almond milk. Our favorite topping: blueberries, flax seeds, walnuts and shredded coconut and always cinnamon and a little raw honey. It keeps me satisfied til mid afternoin!

DeleteHi Janet- happy to see this post. I have tried overnight oats on several occasions and just can't seem to get it right. Not sure what I am doing wrong but it always taste like cement!!! I love hot oatmeal and steel oats topped with bananas or blueberries, and sometimes things like honey, cinnamon, almonds, or maple syrup.

dana i just use regular oats. not steel cut or irish. equal parts oats to liquid (i've heard you can even use water). i don't even stir it when i make it. glad you liked the oatmeal pancakes, they are sooo good. x
DeleteLately and particularly, everything in my life is about trying to simplify in what seems to be my very-complicated world. So, just yesterday, I was compiling a list of best meal plans/recipes for same. This fits perfectly; easy and nutritious and all the right combinations. Thanks, Janet.

DeleteCould this be warmed before eating? Love oatmeal with toppings but not sure about refrig cold. Would you add more liquid?

DeleteWhat type of oats are you using--steel-cut, old-fashioned rolled, quick, or instant? I usually keep steel-cut on hand for eating as a hot cereal and rolled for baking (breads & crisps).
ReplyDeleteIn answer to your question, I prefer a variety so Monday & Friday is eggs (Friday's is with pierogies!); Tuesday & Saturday is smoothies; Wednesday is hot cereal; Thursday is yogurt with berries and granola; and Sunday is potluck but more decadent like waffles, Dutch Baby, homemade cinnamon rolls, etc.
Oh, one tip: When you make waffles or pancakes, make and freeze extra and pop them in the toaster for a quick reheat. They are almost like fresh-homemade and no funky additives like the ones from the market.

ReplyDeleteCooked rolled oats taste like wallpaper paste to me, so I eat them as is, with berries, flax and chia seeds. Rolled oats are already partially 'cooked' before you buy them.
In the winter, I soak steel-cut oats overnight in some water, leave it on the counter, nuke it for a minute in the morning to make it warm, add fruit and seeds.
I vary the fruit according to the season. Sometimes I make it with peanut butter and banana.

i've seen recipes for peanut butter in oats and i've yet to try it but i think it would be good. oats and berries are so good together. right now i'm really loving all the apples in season with them. x
DeleteI found this to be a nice summer alternative to my usual cooked oats. I use almond milk and would just add fresh blueberries and a spoonful of flax meal. I make my cooked oats with water so this felt like a treat to me every single morning.

DeleteI love to add shredded coconut to my over night oats ( I don't add it in the morning, but add it at night so it really flavors the oatmeal). My fav breakfast is still a fruit smoothie, but as the mornings are getting cooler, its just too cold to drink!
ReplyDeleteemily i bet that coconut adds so much flavor overnight. i'm always so lazy at night so i just do my adds in the morning but maybe i'll try harder:) i bet it's getting cold there. any snow yet? x
DeleteWell, Janet, this is kinda embarrassing. You're doing nice healthy staff with your oats. I, on the other hand, am not! Oh, bad me, I'm making oaty crumble toppings. I bought a huge bag of oats recently I mentioned to hubs today that the container is already half empty. That's because I've been blessed with many autumn garden fruits (apples, pears, peaches and rhubarb) and bored with freezing purees, I've now taken to baking crumbles, most for the freezer... but a few for now 😏. So right now I'm using my oats for naughty stuff, not healthy. Oops! Hugs, x

DeleteOatmeal pancakes that are really more like crepes (oat flour, salt, milk & egg) with either a box raspberries or 1/2 a box of strawberries and a tablespoon of bourbon maple syrup.

ReplyDeleteI enjoy these overnight oats..using rolled oats..(steel cut my favorite)...milk..frozen strawberries or blueberries from the summer. I add a little extra milk in the morning if needed.
I enjoy putting this in a mason jar just because it's pretty ❤

DeleteI eat lots of oats & used to make my own granola...also eating hot oatmeal for breakfast several days a week. But I began making something my friend says is muesli, but perhaps my own version. I begin with scant 1/2 c. dry old fashioned oats, mix in 3/4 c. of light lemon yogurt I buy from a local farm, add lots of walnuts or almonds, local honey, cinnamon, fruit that is in season or dried fruit in winter & then thin with a little almond milk. I make it just before I eat it...I don't like soggy food. I think it is healthy & very filling...of course, my bowl is very full.

ReplyDeletethey are regular rolled oats - not instant. and no cooking at all. the overnight soaking in liquid is what softens them. x

ReplyDeleteOh, I could google it but I want to follow this exactly as you do it as I've made too many guesses at measurements for porridge and it's turned out badly!

DeleteJanet, omg... made this last night for this morning and it was fabulous!!! Dan loved it too. Mine was plain with a bit of kosher salt and Dan's had some maple syrup. We both loved how the milk thickened and was so creamy. Thanks so much my friend for this easy, delish breakfast. xxoj.
