I really don't know what to call these oatmeal things. They are a cross between a cookie and a pancake. We eat them as both. I make a batch in the morning and we'll eat the leftovers throughout the day as a snack. They don't look like much but man are they good.
1 cup oatmeal
1 cup soymilk or any other non dairy milk
2 T flour
2 T sugar
1 T baking powder
1 t cinnamon
1 t vanilla extract
1/4 cup dairy-free chocolate chips (I use Trader Joes)
Mix everything together while a skillet is heating with a little bit of coconut oil. I use a cast iron griddle. But use whatever you've got.
Drop by spoonfuls onto hot grill. Keep an eye out because they cook quickly. I like them a little overdone (some may call it burned) but do keep watch.
They need no syrup but a little Earth Balance margarine is good when they are hot of the griddle. Larry loves to take them backpacking. They are quite filling and great with morning coffee. I'll slice some fresh fruit on the side for breakfast. Can anyone think of a clever name for them? xo
