lunch



This is a pretty typical lunch for me these days.  Nothing fancy.  I start with a big layer of greens such as arugula, which is a cruciferous vegetable.  Then I start layering whatever is in the refrigerator.  In this case it was leftover rice, white beans and corn.  A little salsa, avocado and a drizzle of hot sauce.  Yummy and filling.

Another tool I'm using is Dr. Gregors Daily Dozen App for my phone.  Just search in the App store for it, it's free.  It tracks how you are doing on getting the most nutritious foods each day.  Dr. Gregor has listed his Daily Dozen foods we should all be eating for optimal health along with exercise and vitamins.  If you need help staying focused and accountable, I highly suggest you give it a try.

    Only when I read your post did I realise that the generous scoop of pistachio icecream was in fact avocado!

    I eat leftovers for my lunches ...today it was a corn tortilla with some fish, grated colelsaw mix and green salsa...
    You probably already know this Janet that beans and rice are a complete protein.

  3. the simplicity and 'confident eating' are two of the most beautiful and healthful aspects of this meal and ALL your meals!
    I am loving this. and thanking you! we have been sold such a bill of goods our entire lives. (I'm much older than you! so their confusing lies helped all industries except true health.) from the innocence of cigarette smoke when they knew all along of its dangers... to "bad" fats like coconuts???!!! I never smoked. but I endured 52 years of thick second hand smoke. and it affected my heart and lungs. throw in the SAD diet we've been sold and voila! I'm now someone who needs this fresh air example of simple and beautiful cruelty free food from a simply elegant and beautiful lady.

  6. Thank you Janet for the tip about Dr. Gregor's app. This is just what I needed to keep track of the good things we need to eat.
    We've been eating basically vegan (with some fish) for over a year but it's easy to slip into eating potato chips and other junk. I've also been cooking with too much olive oil, I always think my skin "needs" it but we've started taking sea buckthorn instead.
    You are truly an inspiration as ever and I thank you. BIG HUG xxx

  8. This looks delicious. I'm not vegetarian or vegan, but I try to mostly eat that way and limit my meat. Unfortunately, I can't digest legumes though. I love arugula - I mix it in with organic baby greens.
