winter salad - pomegranate





Here is a antioxidant rich winter salad that is as delicious as it is pretty.  Good for holiday parties right?
I love pomegranates!




This is the method I use to de-seed a pomegranate.


Mixed Greens
Orange Sections
Pomegranate seeds
Pumpkin seeds

Holiday Salad Dressing

Larry's grandmothers depression era salad dressing that is delicious but not exactly what I'd call healthy, use sparingly as an occasional treat.  Most of her recipes are delicious and made with what we'd call questionable ingredients today, like lard and sugar.  But his grandparents both lived into their late nineties so go figure.

1/3 cup vinegar
1/3 cup salad oil
1/2 cup sugar

Mix together in jar with tight fitting lid.  Shake until thoroughly mixed.  This thickens as it stands and keeps well.  You can add season salt or fresh herbs.

  1. Your salad looks delicious and beautiful, like a colorful garden on a plate. We have an old pomegranate tree in the backyard that bears lots of fruit, but the squirrels have at them before we can! They seem to take one bite out of each and that's it - rascals :)

  5. Your salad looks delish. I love pomegranate seeds! I've been buying them at Trader Joe's. I can't deal with removing them from the fruit myself -- too messy. I'd rather spend more and have them ready to eat. Yum!

  7. That looks like a gorgeous and tasty winter salad. I have always loved pepitas and pomegranates.
    Did you see that you can get the fruit out of a pomegranate with minimal hassle and mess by doing it under water? Just the pom, not you. Although I guess both would work, too!
    Just cut off the top, score with a knife and break apart while under water in your sink or a big bowl.

  11. Beautiful salad! Thanks for the link on deseeding a pomegranate. I'm going to try that. That salad dressing is similar to one that was recommended to my mother when she was on a salt-free diet -- 1/3 cup each of oil, vinegar, and honey (we're not vegan), plus a clove of crushed garlic. It was very flavorful and no salt needed. It's still a favorite, though I make it nowadays with red wine vinegar and a good olive oil. Funny -- I'd never have connected it with the Depression, though my parents did grow up in that era.

    I got a very similar recipe for salad dressing from a granny but instead of the sugar you use jam!

  19. Why would anybody want to go get some processed crap somewhere for food when you could make a beautiful, healthy, simple salad like this? And the seeds add another healthy benefit. I love hearing about all of the variations. I can almost taste/smell the freshness.

I have read so many blogs over the past five years or so, whittled them time and again and, seriously, you have moved to the top of my faves. You are my Number One blog. In busy days, if I go nowhere else on the web, I always read your blog. Everything here is sensible, inspiring and motivating. And I do think you have the most stunning cottage, decorated with love and loveliness, not to mention that soulful respite of a garden from which you often photo yourself so that we can see your cool outfits. I think you are one woman at mid-age who definitely, definitely has it together even if you sometimes think you don't. I am so looking forward to more great posts in 2014 (not to put pressure on you or anything...). Wish me luck with my move; we close escrow the 30th and have to be out today 'cause termite tent goes up tomorrow morning. I have to find bravery to face my/Mom's packed house, 2 PODS, full garage, shed out back and two huge mounds of boxes on the patio covered with tarps for what I hope will eventually be some rain. I have to remember, so as not to beat myself up incessantly over too many material possessions, that it IS two families and my mom's lifetime accumulations of nearly 90 years in a house she came to almost 60 years ago and from which she never moved (i.e., no cleaning out along the way, at least in the past 30 of those years). I've decided I'm going to do a daily diary/journal to chart my progress and keep myself on pace with it all from January 1; we'll see how long it takes me to declutter Mom and us. I've decided actually to lose the dread and embrace the vision of how magnificent everything will look in, say, 6 months. Husband already has paintbrush in hand (oh, if he could only get to the walls if not for the STUFF in his way!). We'll get there.   20. Looks yummy Janet!! I am taking a page from your book and trying to reduce and simplify my life in 2014. I need to declutter, lose some weight, and have more time for life and less time managing "stuff". I keep thinking of that quote from "Fight Club" you had on your chalk board. It is hard to let go of the quest for more, but for a sensitive person like me, more often means "less" if it drains my energy!! We are trying to put together a simple but pretty and relaxing wedding for June. Beyond that, I am throwing out a lot of stuff and cutting sugar out of my diet altogether (two weeks so far!!).
    You really should post a list of tips for simplifying your life. Things that worked for you, all summarized. I need it. ;)

  21. Happy Christmas Janet! This lovely simple salad looks perfect. Will think of you as I hover over a hot stove with all the old school traditional English Christmas goodies of turkey, ham, lots of veggies, Christmas pudding, brandy butter and egg custard etc etc. All this when our temperatures have been sitting around 35-37C this past week. Madness really but we love it. Luckily we have air conditioning and also cooling mangoes and cherries and lychees and lots of other lovely fresh fruit.   22. I do a salad close to this I add raw brussel sprouts and fennel. It is such a fresh crunchy salad. We have it at least once a week and no complaints yet. I use some juice from the oranges, honey, cider vinegar and olive oil but your dressing looks yummy too. Crunch on!

I just finished making your 'egg salad" which will become part of my family Christmas Day brunch.
