white gazpacho - again

just popping in with a quick post today.
and while i'm at it i may as well apologize for my lack of posts.
sorry, but i haven't had anything to say.

the weather has been dreadfully hot here and i can't bear to turn the stove on.
so yesterday i went digging in the recipe archive and as soon as i saw this i knew it was what we were having for dinner...

this recipe that i swiped from slim who i believe swiped it from food and wine magazine.  it is so good and so refreshing you may want to give it a try.

i changed the recipe a little and so this what i used last night

about a lb and a half of green grapes
1 peeled and diced cucumber
2 chopped scallions
1/4 c almonds
1/2 to 1 c almond milk
6 oz plain soy yogurt
1/4 c rice vinegar
1 t red pepper flakes

i pulse the almonds in the blender first and then add the rest of the ingredients and blend til smooth.  refrigerator for a couple of hours and serve with a small salad and slice of bread.

enjoy!

  1. Hello Janet:
Well, Gazpacho is a staple food here during the summer. Indeed, it is on the menu for a lunch party tomorrow, but the red [tomato]variety and not this exotic white version. We are intrigued by this most unusual of cold soups and whilst temperatures continue here at 30C+ we might well give this a whizz!!!

  2. This looks so good. I got a Blendtec a few weeks ago and have been trying every recipe I can get my hands that involve using a blender.

  3. Hey Janet. Lack of something to say never keeps me from posting, to the dismay of some I imagine.

    Love to you.

  4. Hmmmm. Is it a fruit soup or a vegetable soup? Curiously ambiguous. But it sounds pretty good and very refreshing. I like the addition of the red pepper flakes.

It's getting cool here. I was thinking of making my vegan Tom Ka to test my recipe and to warm things up a bit. I've seen you've had earthquakes and monsoons. I've been worried.

It's beautiful here in Santa Barbara. Not too hot but still feeling like summer.

PS. Is this a new template?? It looks very chic and clean. I wish I had the ability to write cursive-y copy on Wordpress :(

PPS. Have you started your packing for NY yet?!!

  15. Can't wait to try this. I try to make a soup each week for myself, during the day....an easy lunch. This would be perfect. And let's face it, Janet....this is why you're rockin' the size 2!
