the worlds fluffiest vegan pancakes*

















hello everyone!
i rarely post on saturdays so what a surprise.
i'm up early for a day of hiking in palm springs where it is going to be sunny and 74 degrees today.  i wanted to share this great pancake recipe with you before i go. 
so while you are out running errands today you can get the ingredients and make them for your family on sunday morning.
i follow the recipe exactly.

i swiped the recipe from here.

they are so good and so easy.
they are truly fluffy.
they are truly yummy.

oh and btw, quite a few of you have asked about my wardrobe now that i've lost weight.
i'm cleaning out my closet and selling some things on ebay.

  1. Janet would you believe I had pancakes for dinner the other night. Melted apricot preserves on top! Yum.

    When my children were young we would do this when their Dad was away. Breakfast for dinner and they loved it!

  7. Thank you, Janet! Sunday morning pancakes it will be! Also, I made Shell's balsamic/dijon/maple syrup salad dressing today--it was really, really good! I will make that yummy salad dressing all the time! Easy, fat-free, and delicious! Hope your hiking was wonderful! You are an angel!

    Sure wish I could fit in that vintage dress!

  13. yum the pancakes look delicious, what do you use instead of butter or cream that isn't margarine? I too have been selling on ebay and made some goooood money too. I'm looking around for what's next! It's a bit addictive.

    I have personal question...when out hiking what do you do for sunscreen? Do you wear a hat or certain product? I live in florida and am trying really hard to avoid sun exposure, i look 'cute' in hats but seriously dislkie 'hat hair' and am finding sunscreens to be ver heavy. Thought you might have some suggestions you could share.

  15. jodie i use earth balance. it's a vegan substitute for butter and margarine. it is delicious.

    catherine. i wear a hat and long sleeves to protect myself from the sun. everyone who didn't wear a hat yesterday got burned, even if they put sunscreen on.

    2.Our breakfast was awesome! Fluffy vegan pancakes with maple syrup and blueberries! Thank you for that recipe! My husband loved them!
    3. Earth Balance is delicious. In the first cookbook by Skinny B. she says if she could have Earth Balance Babies, she would. :-)

  17. I was going to try the pancakes, but do not own a sifter and don't want to buy one. But I do still make apple cinnamon pancakes from a previous recipe you posted and they are delicious!

  18. I am tickled to read that Suzanne in Illinois made the no oil dressing and loves it! Great! If you don't have heart disease you can even add a little olive oil to it if you want. There are so many wonderful vegan recipes that are easy and HEALTHY for us & planet earth & for reducing animal sufferring.

  20. Someone was posting on Dr Mc Dougall's boards today about this site --below--which reminds me of the section of Dr McDougalls new book on the Roman gladiators. These fighters say the plant based diet makes them stronger and faster than a meat based diet.

  24. The linked recipe says to cover the pan while the pancakes cook. Is that typical? Is it necessary? I am a very novice cook.
