chocolate chip oatmeal cookies*





As my cleanse is almost over (yay), I'm dying, dying I say for some chocolate chip cookies.  In my book there are few things better than chocolate chip cookies and an ice cold glass of soymilk. Well maybe there are lots of things better but this is way up on my list.   Here is my recipe, you'll note it's pretty healthy.  I like the slight taste of banana with chocolate and walnuts but if you don't, just use your regular egg substitute.


1/2 c room temp earth balance
1/2 c brown sugar
1 egg substitute (i use 1/2 ripe, mashed banana for this)
1 t vanilla extract
1 c whole wheat flour
1 t baking soda
2 T soymilk
1 c oats
3/4 c chocolate chips
1/2 c walnuts

In a bowl cream margarine for 30 seconds and then add 1/2 c brown sugar.  beat til fluffy.  add egg substitute and vanilla extract, beat until well combined.  stir in flour, baking soda and soymilk.  add oats, chocolate chips and walnuts.  use a teaspoon to drop cookies onto baking sheet and bake at 375 degrees for 12-14 minutes. 
makes approximately 24 cookies

    I usually always use mashed bananas for the substitute or chunky applesauce works too.
    I'm having hot chocolate with mine though - if I get on a chocolate high I might not notice the 12 more inches of snow that we're getting buried under! :)

  6. I love this recipe. I have a child, in my classroom, with an egg allergy. He also has a peanut allergy. I hope I can find chocolate chips not made around peanuts. I feel so bad when others bring snacks that contain eggs and peanuts. I would love to bring special treat for everyone. Thanks!

    I'm not sure what half these ingredients are but I love the look of these biscuits. Which is what we call cookies here in Australia. What you call biscuits we call scones. Isn't it funny?

    I worry that if you visited me here in the Antipodes that you would really struggle to find vegan ingredients (apart from vegetables and soy stuff that is). Plus you would be shocked and horrified at the exhorbitant prices we pay for groceries. And the flood will make prices skyrocket as a lot of farmers lost entire crops.

    Meanwhile I shopped for tonnes of baby shower stuff today. Pity you can't come. It's going to be very glamorous.

  14. Those cookies look so more-ish! My 11 yr old daughter was making chocolate chip cookies just last night, except instead of chips she just put one big chunk in the centre of each one. Warm with a cup of tea - happy days!! Hearing her baking in the kitchen whilst dancing to her favourite music was one of those deliriously happy mummy moments, seeing your little girl growing up, but all cosy and content in the kitchen cooking up a storm =joy!!

  15. Hi Janet. We were iced in on Tuesday this week and Drew and I made these cookies. They're all gone now. We used the recipe on the box of oatmeal--it's one of my favorites! I have a feeling if I used a banana like you do Matt would go CRAZY for them.

    My favorite vegan cookie recipe is one I found from Bethenny Frankel (of Housewives fame). She bugs me because she brands herself as a "natural chef" - um, no. Committed natural chefs do not eat hamburgers. But I digress - she does have a really wonderful vegan chocolate chip banana oatmeal cookie recipe. They are SO SO good.

  31. I also was not in the know about mashed banana/egg. I could do with a healthier cookie. I wonder if it's possible to enjoy in moderation? I made some Martha Stewart white chocolate cookies a couple of times a while back and they are now banned. I eat and eat until they are gone. I don't have one of those internal stop things.

  32. Janet - I had no idea you could substitute egg for banana. I'm really not an egg person (the whole concept freaks me out to be honest - I know I don't have to tell you that! : ) So I'm happy to know I have another option! I think I missed to cleanse post too - how am I missing posts? And what are you cleansing - I feel like you've got to be one of the healthiest/cleansed-already people I know!

  35. melissa and fiona - yes a banana can be used as an egg substitute in baked goods as long as you don't mind a slight flavor of banana. i think banana and chocolate blend well together so i don't have a problem with it. it works perfect in this recipe b/c the banana acts as the binder.

    paula - it would seem that a vegan would not have to cleanse but i also am exposed to many pollutants in the air and water and chemical ingredients in foods. also, it's a good way for me to set my intentions for a whole new year of eating. bringing a consciousness to the food i'll be putting in my body. does that make sense?

  36. oh yes, the water! I forgot ... in Vienna the tabwater is mainly water from mountain springs. Not all regions in Austria are so lucky. The concsiousness is a really good point. It certaintly works, I can tell from your photos :-)
